Summertime Succotash

This beautiful fresh and vibrant Succotash is the perfect side dish at any Summertime BBQ.





Ingredients:


4 Rashers of thick Smoked Bacon, cut into small dices

4 Sweetcorn Cobs

4 Tomatoes, quartered

1 tbsp Olive Oil

2 Garlic Cloves , finely chopped

100g Lima Beans

1 Red Chili , de-seeded and chopped

Large Handful Fresh Basil , chopped

Large Handful Fresh Mint , chopped

1-2 tsp Sherry Vinegar

Chives, finely chopped



Method:


  1. Use a knife to cut down the length of the sweetcorn to remove the kernels. Heat the oil in a large pan. Then cook the bacon, kernels and garlic over a medium heat for 5 mins, stirring all the time.

  2. Now add the frozen beans and tomatoes to the pan, cover and cook, stirring every so often, for another 4-5 mins or until the beans are cooked through. Turn off the heat and add the chilli, herbs and vinegar. Scatter finely chopped chives over the top and season to taste. Delicious!
