French Brie, Garlic and Cracked Pepper Bucatini

This very quick, easy and delicious recipe is perfect for those evenings where time is against you.


Serves 2...





Ingredients :


100g French Brie

100g Parmigiano (plus extra for shaving)

Bucatini Pasta (2 servings)

4 Cloves Garlic

1tbsp Olive Oil

1tbsp Truffle Oil

2tbsp Creme Fraiche

Cracked Pepper (to taste)


Method:


1. Simply bring a saucepan of water to the boil, add a dash of olive oil and salt, then add the Bucatini pasta (enough for 2) and cook for 8 mins until al dente. Keep 90mls of the starch water, you'll need it later.


2. Whilst the pasta is cooking, heat a large pan with 1 tbsp olive oil and 1 tbsp truffle oil, slice thinly 4 cloves of garlic and lightly toast in the oil. Once golden in colour, remove with a fork and set to one side. Then add 100g chopped French Brie, 100g grated parmigiano in the infused garlic truffle oil. Melt gently, then add the starch water from the cooked pasta along with 2 tbsp creme freiche. Mix well, then toss the cooked drained pasta in the cheese sauce. Add cracked pepper to taste. Top with the toasted garlic and shavings of parmigiano. Serve immediately.
