Ingredients:
450g Flour
50g Lard
Sour Milk
4 tbsp Course Oatmeal
1tsp Kosher Salt
1tsp Bicarbonate Soda
Method:
Pre heat the Oven to 220c
1. Start by sifting the flour, salt and bicarb thoroughly.
2. Then rub in the lard until you get fine breadcrumbs, then mix in the oatmeal. Make a well in the middle of the mixture, add the very sour milk until you get a dry, spongy dough. If the dough is too wet the bread will be too heavy.
3. Next place the dough onto a well floured surface and cut the dough into two pieces, then quickly roll out the dough into two flat cakes, score each cake into quarters then place onto two floured baking trays.
4. Bake in the centre of the oven for 30-35 minuets on 220c. When finished the bread will be a golden brown and hollow sounding when the tops are tapped.
I like my slice toasted for breakfast and served with delicious Farm Butter.
